About "date and time" problem: we checked in admin/structure/types/manage/event/fields/field_event_date and could see that you configured setting as "site's time zone", site got time zone GMT+7 so wrong time displayed.
To edit "MD Ambrosia newsletter category", please go to admin/config/services/simplenews and configure.
