how to securely update core drupal

Hi, how to securely update a core of drupal? which ones  files and folders can i deleted to update?

I have configurated structure theme ...

Hi,

Please delete all folders and files in your web root folder (exclude folder SITES) then copy folders and files (exclude folder SITES) in latest source drupal to replace. Also, remember to backup source + database before do any work.

and profiles deleted too?. all my theme profiles are in folder sites. right.

You can delete all web root folders but not folder SITES because modules, theme, images are in there. So please make sure that you do not delete folder SITES and do a backup before.
